  • 4 pounds beef roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the beef roast with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat.
  4. Brown the roast on all sides and then remove it from the pot.
  5. Add chopped onion and minced garlic to the pot; sauté until softened.
  6. Deglaze the pot with red wine, scraping up any browned bits.
  7. Add beef broth, Worcestershire sauce, thyme, and rosemary.
  8. Return the beef roast to the pot and cover it.
  9. Braise in the oven for 3 to 4 hours, or until very tender.
