  • 3 pounds chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme
  • 4 carrots, sliced
  • 4 potatoes, quartered

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the roast with salt and pepper.
  3. In a large skillet, heat the vegetable oil over medium heat. Sear the roast on all sides until browned.
  4. Add onions and garlic to the skillet, cooking until softened.
  5. Transfer the roast to a large pot or Dutch oven. Pour in beef broth and Worcestershire sauce.
  6. Add thyme, carrots, and potatoes.
  7. Cover and braise in the oven for 3-4 hours, or until the meat is tender.
  8. Remove from oven, let rest for 10 minutes before slicing.
