  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 large carrots, chopped
  • 2 stalks celery, chopped

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef roast generously with salt and black pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Brown the beef on all sides, about 3-4 minutes per side.
  4. Remove the beef and set aside. In the same pot, add the chopped onion and sauté until translucent.
  5. Add the minced garlic and cook for an additional minute.
  6. Pour in the beef broth and red wine, scraping the bottom of the pot to get all the browned bits.
  7. Add the beef back to the pot, along with rosemary, thyme, carrots, and celery.
  8. Bring the mixture to a simmer, then cover and transfer the pot to the preheated oven.
  9. Braise for 3-4 hours until the beef is fork-tender.
  10. Remove from the oven, let it rest for 10 minutes, then slice and serve.

Notes

  • For extra flavor, sear the beef a day ahead and let it marinate in the fridge overnight.
  • Serve with mashed potatoes or crusty bread.
