- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 large carrots, chopped
- 2 stalks celery, chopped
- Preheat your oven to 325°F (160°C).
- Season the beef roast generously with salt and black pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Brown the beef on all sides, about 3-4 minutes per side.
- Remove the beef and set aside. In the same pot, add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for an additional minute.
- Pour in the beef broth and red wine, scraping the bottom of the pot to get all the browned bits.
- Add the beef back to the pot, along with rosemary, thyme, carrots, and celery.
- Bring the mixture to a simmer, then cover and transfer the pot to the preheated oven.
- Braise for 3-4 hours until the beef is fork-tender.
- Remove from the oven, let it rest for 10 minutes, then slice and serve.
