  • 4 boneless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup dried cranberries
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together spinach, cranberries, cream cheese, mozzarella, garlic powder, salt, pepper, and Italian seasoning.
  3. Cut a pocket in each chicken breast and stuff the mixture into the pockets.
  4. Heat olive oil in a skillet over medium heat and sear each chicken breast until golden brown on both sides.
  5. Transfer the chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  6. Let it rest for 5 minutes before serving.
