- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup fresh strawberries, pureed
- 2 cups powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup strawberry puree
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Add the softened butter, milk, vanilla extract, and egg; mix until smooth.
- Fold in the strawberry puree until well combined.
- Pour the batter into the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely on a wire rack.
- For the buttercream, beat the powdered sugar and butter until fluffy.
- Add the strawberry puree and vanilla extract; mix until combined.
