This Strawberry Swirl Cheesecake is a delightful dessert that combines creamy cheesecake with a fresh strawberry swirl, making it perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 cup fresh strawberries, pureed
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and vanilla, mixing well.
  4. Add eggs one at a time, mixing until incorporated. Stir in sour cream until smooth.
  5. Pour half of the cheesecake batter over the crust. Drizzle half of the strawberry puree on top and use a knife to swirl.
  6. Pour the remaining batter on top and repeat with remaining strawberry puree. Swirl again to create a marbled effect.
  7. Bake for 55-60 minutes, until the center is set but slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  9. Remove from oven, chill in the fridge for at least 4 hours, preferably overnight, before serving.

Notes

  • For a richer flavor, add lemon zest to the batter.
  • Decorate with fresh strawberries on top before serving.
