1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
4 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1/2 cup sour cream
1 cup fresh strawberries, pureed
1/4 cup powdered sugar
Instructions
Preheat the oven to 325°F (163°C).
In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and vanilla, mixing well.
Add eggs one at a time, mixing until incorporated. Stir in sour cream until smooth.
Pour half of the cheesecake batter over the crust. Drizzle half of the strawberry puree on top and use a knife to swirl.
Pour the remaining batter on top and repeat with remaining strawberry puree. Swirl again to create a marbled effect.
Bake for 55-60 minutes, until the center is set but slightly jiggly.
Turn off the oven and let the cheesecake cool in the oven for 1 hour.
Remove from oven, chill in the fridge for at least 4 hours, preferably overnight, before serving.
Notes
For a richer flavor, add lemon zest to the batter.
Decorate with fresh strawberries on top before serving.
