  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh berries (strawberries, blueberries, raspberries)
  • 2 cups sliced peaches

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Fold in the fresh berries and sliced peaches gently.
  5. Pour the cream cheese mixture over the crust in the pan.
  6. Bake for 45 minutes or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
