A delicious and comforting Thai Coconut Red Lentil Soup that’s simple to prepare and full of flavor.

Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 red bell pepper, chopped
  • 1 cup spinach, chopped
  • 1 tablespoon cilantro, for garnish

Instructions

  1. In a large pot, sauté onions, garlic, and ginger until softened.
  2. Add red curry paste and cook for another minute.
  3. Stir in lentils, vegetable broth, and coconut milk. Bring to a boil.
  4. Reduce heat and simmer until lentils are tender.
  5. Add bell pepper, spinach, lime juice, and soy sauce. Cook for additional 5 minutes.
  6. Serve hot, garnished with cilantro.

Notes

  • Adjust the spice level by adding more or less red curry paste.
  • For a creamier soup, blend part of the soup before adding spinach.
