- 1 cup red lentils
- 1 can coconut milk
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1 red bell pepper, chopped
- 1 cup spinach, chopped
- 1 tablespoon cilantro, for garnish
- In a large pot, sauté onions, garlic, and ginger until softened.
- Add red curry paste and cook for another minute.
- Stir in lentils, vegetable broth, and coconut milk. Bring to a boil.
- Reduce heat and simmer until lentils are tender.
- Add bell pepper, spinach, lime juice, and soy sauce. Cook for additional 5 minutes.
- Serve hot, garnished with cilantro.
Notes
- Adjust the spice level by adding more or less red curry paste.
- For a creamier soup, blend part of the soup before adding spinach.
