  • 1 pound boneless chicken thighs
  • 1 cup Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame oil
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced for garnish

Instructions

  1. In the pressure cooker, combine chicken thighs, sweet chili sauce, soy sauce, garlic, ginger, sesame oil, and chicken broth.
  2. Seal the lid and cook on high pressure for 10 minutes.
  3. Once done, perform a quick release of the pressure.
  4. Remove chicken and set aside. In a small bowl, mix cornstarch and water, then stir into the sauce to thicken.
  5. Return the chicken to the pot, stir to coat and heat through.
  6. Serve garnished with green onions.

Notes

  • You can adjust the sweetness by adding more or less of the chili sauce.
