- 1 pound boneless chicken thighs
- 1 cup Thai sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon minced garlic
- 1 teaspoon ginger, grated
- 1 tablespoon sesame oil
- 1 cup chicken broth
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 green onions, sliced for garnish
- In the pressure cooker, combine chicken thighs, sweet chili sauce, soy sauce, garlic, ginger, sesame oil, and chicken broth.
- Seal the lid and cook on high pressure for 10 minutes.
- Once done, perform a quick release of the pressure.
- Remove chicken and set aside. In a small bowl, mix cornstarch and water, then stir into the sauce to thicken.
- Return the chicken to the pot, stir to coat and heat through.
- Serve garnished with green onions.
