- 1 pound shrimp, peeled and deveined
- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cook the turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
- In the same skillet, add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat.
- In a large bowl, combine the cherry tomatoes, avocado, red onion, and cilantro.
- Add the cooked shrimp and turkey bacon to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper. Pour over the salad and toss to combine.
