A delicious shrimp salad featuring turkey bacon and a zesty dressing.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
  2. In the same skillet, add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat.
  3. In a large bowl, combine the cherry tomatoes, avocado, red onion, and cilantro.
  4. Add the cooked shrimp and turkey bacon to the bowl.
  5. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper. Pour over the salad and toss to combine.
  6. Serve immediately or refrigerate for later.

Notes

  • You can substitute shrimp with cooked chicken for a different flavor.
  • Feel free to add other vegetables like bell peppers or cucumbers.
