Tiramisu Espresso Cookies Fusion

  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons strong brewed espresso, cooled
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 tablespoon cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add the egg, vanilla, and espresso, mixing until combined.
  4. Gradually incorporate the dry ingredients into the wet mixture.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 10-12 minutes or until the edges are firm, but the centers remain soft.
  7. Let cool completely.
  8. Meanwhile, mix mascarpone cheese and powdered sugar in a bowl until smooth.
  9. Once cookies are cool, spread the mascarpone mixture between two cookies to create a sandwich.
  10. Dust with cocoa powder before serving.

Notes

  • For a stronger espresso flavor, use espresso powder in the dough.
  • These cookies can be stored in an airtight container for up to a week.
