A deliciously creamy vegan garlic alfredo pasta that’s simple to make and perfect for a comforting meal.

Ingredients

  • 8 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup raw cashews, soaked
  • 1 cup vegetable broth
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. In a blender, combine soaked cashews, vegetable broth, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth.
  4. Pour the sauce into the skillet with garlic, and cook for a few minutes until heated through.
  5. Add the cooked pasta to the sauce and toss until well coated.
  6. Serve immediately, garnished with fresh parsley if desired.
