  • 1 cup vegan ricotta cheese

  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 cup nutritional yeast
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise and grill or roast them until slightly tender.
  3. In a bowl, mix the vegan ricotta cheese, chopped spinach, garlic powder, Italian seasoning, nutritional yeast, salt, and pepper.
  4. Spread a layer of marinara sauce in a baking dish.
  5. Fill each zucchini slice with the ricotta mixture, roll it up, and place it seam side down in the dish.
  6. Top with remaining marinara sauce.
  7. Bake for 25-30 minutes, until heated through.
