  • 9 lasagna noodles unprepared
  • 2 cups ricotta cheese
  • 4 cups fresh spinach
  • 2 cups mozzarella cheese, shredded
  • 1 cup white pesto
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until al dente.
  3. In a bowl, mix ricotta cheese, garlic powder, and salt until well combined.
  4. In a baking dish, spread a layer of white pesto on the bottom.
  5. Layer 3 lasagna noodles, half of the ricotta mixture, half of the spinach, a layer of mozzarella, and a layer of white pesto.
  6. Repeat the layering process and top with remaining mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden and bubbly.
  8. Let it cool for 10 minutes before slicing and serving.

Notes

  • For a heartier version, add cooked chicken or mushrooms to the layers.
  • This dish can be prepared in advance and baked when needed.
