- 9 lasagna noodles unprepared
- 2 cups ricotta cheese
- 4 cups fresh spinach
- 2 cups mozzarella cheese, shredded
- 1 cup white pesto
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions until al dente.
- In a bowl, mix ricotta cheese, garlic powder, and salt until well combined.
- In a baking dish, spread a layer of white pesto on the bottom.
- Layer 3 lasagna noodles, half of the ricotta mixture, half of the spinach, a layer of mozzarella, and a layer of white pesto.
- Repeat the layering process and top with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden and bubbly.
- Let it cool for 10 minutes before slicing and serving.
