  • 8 ounces udon noodles
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped

Instructions

  1. Cook the udon noodles according to package instructions, drain, and set aside.
  2. In a large skillet, heat the vegetable oil over medium-high heat.
  3. Add the shrimp and cook until pink, about 3-4 minutes. Remove and set aside.
  4. Add bell peppers, carrots, and garlic to the skillet; sauté for 2-3 minutes until vegetables are tender.
  5. Return the shrimp to the skillet, then add the cooked udon, soy sauce, oyster sauce, and sesame oil.
  6. Toss everything together and cook for another 2 minutes.
  7. Serve hot, garnished with green onions.

Notes
