  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Stir in red bell pepper and cook until soft.
  4. Add cumin, smoked paprika, cayenne, tomatoes, salt, and black pepper; simmer for 10 minutes.
